The color of the beet juice embodies the distinctiveness of the mineral-rich red soil that is characteristic of the highlands of Jalisco. Lime and ginger beer add bite and the earthy notes of the beets integrate well with the minerality of the Blanco tequila. There’s a lingering sweetness from the agave syrup.

El Tesoro™ Blanco tequila
1 part
fresh lime juice
¾ part
agave syrup
2 parts
fresh red beet juice
Ginger beer
Glass
Collins
Garnish
Fresh mint
Place all the ingredients in a Boston shaker with ice (except the ginger beer). Shake vigorously. Strain over a Collins glass filled with crushed ice. Top with ginger beer and garnish with fresh mint.
